Lunches have been a little different for me lately since I'm eating from home. I have more time to make lunch. On Friday I had threw some leftover brown rice and black beans into a taco salad. I just mixed in some lettuce, onion, cucumber, and salsa. Usually I'd add avocado too, but mine wasn't ripe yet. :(
I also enjoyed some kale chips. These are a must try! I finally tried them a few weeks ago and they are delicious. I've decided I have to grow kale in my garden this year. The recipe I used is based off of this one. I usually sprinkle with some pepper too.

Fun! Love the new food post! I'd love to learn your secret to Kale chips. I tired them once - but they were so dry/airy that they almost desolved just when I picked them up! How can I get them to be thicker/sturdier?
ReplyDeleteI'm trying to figure this one out because I'm not quite sure what you mean. I know I have to watch mine when their baking. My perfect bake time is between 8-9 minutes so they don't get too crispy. What temperature were you baking them at?
ReplyDeleteUsually there is a variety of textures in my batches. Some are crispy, but others are still a little soft. I've read some people remove finished ones and let the others continue to bake, but that sounds like too much work for me!
I'll need to bake another batch to see what I'm doing. Basically, when I cooked them... they were so thin/brittel - almost like tissue paper. The fell apart before I even took them off the cookie sheet.
